Shrimp-Spinach Crepe Stack

  1. Prepare Creamed Spinach; set aside.
  2. Heat oil in medium skillet over medium heat; add onion and garlic.
  3. Cook, stirring occasionally, until onion is tender.
  4. Add mushrooms; cook until mushrooms are tender.
  5. Continue cooking until moisture has evaporated.
  6. Stir in Creamed Spinach, shrimp, lemon juice, tarragon, salt and pepper.
  7. Preheat oven to 375u0b0.
