Cinnamon-Vanilla Green Tomato Bread

  1. Preheat oven to 350u0b0F. You'll need two 5 x 9 loaf pans sprayed with Baker's Joy. Set aside.
  2. In a food processor (or a blender), add diced green tomatoes and diced green apple. Pulse several times and puree several minutes on high.
  3. Using a stand mixer with paddle attachment (or hand mixer), add flour, salt, and baking soda. Whisk to combine. Add eggs, vegetable oil, both sugars, and mix for 2 minutes. Add cinnamon, both extracts, and nutmeg. Run mixer several minutes. Transfer pureed tomato/apple mixture into batter and mix on low 2-3 minutes to incorporate. (It may seem heavy or dry, but I assure you, once baking, the tomatoes add moisture.)
  4. Divide batter evenly between loaf pans. Bake 50-55 minutes. Insert a toothpick after 55 minutes; it should come out clean.
  5. Allow to rest. Serve with good butter and enjoy this wonderful bread. We absolutely love it!
