Swedish Almond Cake
- 1 cup Vanilla Sugar (See Note)
- 1 whole Lemon, Zested
- 2 whole Eggs
- 1/4 teaspoons Salt
- 1/2 teaspoons Almond Extract
- 1 cup Flour
- 1/2 cups Butter, Melted
- 1 Tablespoon Coarse Sugar (or Pearl Sugar)
- 2 Tablespoons Sliced Almonds
- In the bowl of your stand mixer, blend vanilla sugar with the lemon zest. Beat in eggs, one at a time. Add in salt and almond extract.
- Mix in the flour and melted butter. Sprinkle coarse sugar and almonds on top and mix to combine.
- Pour batter into a greased and floured 9-inch cake pan. Bake in a 350u0b0F oven for about 25 minutes. Remove from the oven, cool several minutes before turning out of the pan.
- Note: I used homemade vanilla sugar (you can find a recipe on my blog). But you can certainly substitute granulated sugar mixed with the seeds from half of a vanilla bean, scraped. Or instead of the seeds you can use 1/2 teaspoon pure vanilla extract.
