Quick Spinach Lasagna
- 1 pkg. lasagna noodles
- 2 c. grated Mozzarella cheese
- 1/2 lb. Ricotta cheese
- 1/2 lb. cottage cheese
- 1 (8 oz.) pkg. frozen spinach, thawed and drained
- 1 lb. ground beef or Italian sausage (optional)
- 1 jar favorite spaghetti sauce
- 1/2 tsp. Italian seasoning
- salt and pepper
- Parmesan cheese
- 2 eggs
- 1/4 c. chopped onion
- cooking oil
- Saute the onions in cooking oil until tender.
- Combine Ricotta cheese, cottage cheese, eggs, spinach, Italian seasoning, salt, pepper, sauteed onion and 1/2 cup Parmesan cheese in bowl and set aside.
- If using meat, cook and drain.
- Cook the noodles to almost done.
- Don't cook all the way.
- Cook them until they're rubbery to avoid them falling apart.
