Quick Spinach Lasagna

  1. Saute the onions in cooking oil until tender.
  2. Combine Ricotta cheese, cottage cheese, eggs, spinach, Italian seasoning, salt, pepper, sauteed onion and 1/2 cup Parmesan cheese in bowl and set aside.
  3. If using meat, cook and drain.
  4. Cook the noodles to almost done.
  5. Don't cook all the way.
  6. Cook them until they're rubbery to avoid them falling apart.
