Berry Skillet Cobbler
- 16 ounces, weight Strawberries, Sliced
- 2 cups Blueberries
- 1 Tablespoon Lemon Juice
- 2 Tablespoons White Sugar
- 1 cup All-purpose Flour
- 1 teaspoon Baking Powder
- 1 teaspoon Cinnamon
- 1 teaspoon Salt
- 1/2 cups Unsalted Butter, Softened
- 1 cup Brown Sugar
- 1 teaspoon Almond Extract
- Preheat oven to 375u0b0F.
- In medium bowl, combine strawberries, blueberries, lemon juice and sugar. Spread onto the bottom of eight 3 1/2 inch skillets, or one 12-inch skillet or casserole dish. Set aside.
- In a medium bowl, mix together flour, baking powder, cinnamon, and salt. Set aside.
- In a large bowl, cream together butter, brown sugar, and almond extract until smooth. Slowly add dry ingredients to butter mixture until combined. Mixture will be crumbly.
- Drop mixture by the spoonful (you may need to pat mixture with your hands to form a ball) onto the berries. Bake for 22-25 minutes, or until topping is lightly browned. Remove from oven and serve immediately.
