Sweet And Savory Potatoes
- 1 whole Sweet Potato
- 2 Tablespoons Vegetable Oil, Divided Use
- 1 cup Sliced Mushrooms
- 1/4 cups Diced Onion
- 1-1/2 Tablespoon Marsala Wine
- 1 dash Sugar
- 1 slice Veggie Bacon, Cut Into Small Pieces
- Salt And Pepper, to taste
- Peel and dice sweet potato. Add sweet potato to hot and oiled cast iron skillet, on medium high heat. Sprinkle with salt and pepper. Saute sweet potato until crunchy on the outside and soft on the inside. Remember to toss potatoes around pan so they do not stick. Cooking the sweet potato will take approximately 8-10 minutes.
- In a separate oiled pan, over medium high heat (at the same time as potatoes) saute onion and mushroom, sprinkle with salt and pepper and cook for approximately 5 minutes. Add Marsala wine to the onion mixture. Let the wine slowly boil out of the pan, approximately 5 minutes. Continue to cook onion mushroom mixture until mushrooms start to get slightly brown.
- When potatoes are cooked to your liking, sprinkle very lightly with sugar, and continue to toss in pan. Add veggie bacon pieces to potatoes. Cook about 1-2 minutes. You want the veggie bacon to become crunchy. Next add onion and mushroom mixture to potatoes and veggie bacon. Toss everything in cast iron skillet. Cook another minute or two and the dish is done!
