Chicken Cacciatore
- 4 chicken legs with thighs
- 2 Tbsp. corn oil
- 2 Tbsp. butter or margarine
- 2 cloves garlic, pressed
- 1 small onion, peeled and chopped
- 1 1/2 c. plum tomatoes, peeled and chopped
- 1 1/2 tsp. marjoram, chopped
- 2 tsp. oregano
- 1 Tbsp. basil, chopped
- 1/2 tsp. thyme, chopped
- 1/2 tsp. rosemary, chopped
- 1 (6 oz.) can tomato paste
- 1 1/4 c. water
- 1 Tbsp. fresh lemon juice
- 1 c. dry white wine
- 1 green pepper, chopped
- 1/2 tsp. black pepper
- Pour off excess fat, leaving the brown drippings in the broiler pan.
- Add 1/4 to 1/2 cup of water to pan; heat and stir. Season to taste.
- Unthickened gravy is best for steaks.
