Stuffed Green Peppers(Microwave)
- 1 lb. ground beef
- 1/3 c. finely chopped onion
- 2 cans (8 oz. each) tomato sauce, divided
- 1/4 c. water
- 3 Tbsp. Parmesan cheese, divided
- 1 tsp. salt
- 1/8 tsp. pepper
- 1/2 c. instant rice
- 4 medium green peppers (about 1 lb.)
- In medium glass bowl, crumble ground beef.
- Stir in onions. Heat at High 3 1/2 to 4 1/2 minutes, or until beef loses pink color.
- Stir once; drain.
- Stir in 1 can tomato sauce, water, 1 tablespoon cheese, salt and pepper.
- Heat, covered with plastic wrap, at High 2 1/2 to 3 1/2 minutes.
- Stir in rice; let stand, covered, 5 minutes.
- Cut peppers in half lengthwise; remove seeds and rinse.
- Spoon beef and rice filling into each half; place in oblong baking dish.
- Top with remaining sauce and cheese.
- Cover with plastic wrap.
- Heat at High 10 to 12 minutes, or until peppers are tender.
- Let stand, covered, for 5 minutes before serving.
