Nectarine & Blueberry Crumble
- 1 whole Fresh Ripe Nectarine, Peeled, Pitted, Sliced
- 1/2 cups Fresh Or Frozen Blueberries
- 2 Tablespoons Pure Honey
- 1/2 teaspoons Cinnamon
- 1 pinch Nutmeg
- 4 whole Shortbread Sugar Cookies, Crumbled
- 2 Tablespoons Sweet Cream Butter, Melted
- 1 teaspoon Light Brown Sugar
- Preheat oven to 400u0b0F. Spray an oval or square baking dish with your favorite cooking spray (I use Bakers Joy).
- In a mixing bowl, add nectarine slices, blueberries, honey, cinnamon, and nutmeg. Mix gently to combine. Transfer to the baking dish and smooth with an offset spatula.
- In a small bowl, add crumbled cookies, melted butter, and brown sugar. Stir to combine. Sprinkle on top of the baking dish and, using the back of a large spoon, pat down.
- Place on a baking sheet. Bake in the oven 12-14 minutes.
- Serve with vanilla bean ice cream or frozen yogurt. Delicious!
