Carrot-Banana Bread

  1. Beat eggs until fluffy, then add bread and mix well.
  2. Add remaining ingredients, except carrots and banana.
  3. Mix together on low speed for 1 minute.
  4. Fold in carrots and banana.
  5. Pour mixture into a 7 x 4 x 2-inch loaf pan that has been sprayed with a nonstick cooking spray.
  6. Bake at 350u0b0 for about 40 to 45 minutes. Serves 2.
