Italian Lamb Chop And Potato Bake
- 6 lamb chops (American lamb; either long blade or round bone)
- 1/2 c. bread crumbs
- 1 Tbsp. chopped Italian parsley
- 2 cloves garlic, chopped
- salt and pepper to taste
- 6 medium potatoes, cut like French fries
- 1/2 c. oil
- 1 c. water
- Coat small roasting pan with Crisco or Pam.
- Trim chops; rub with 1 clove of garlic.
- Arrange chops in pan.
- Mix bread crumbs, parsley, chopped garlic, salt and pepper; set aside.
- Mix cut potatoes with a bit of oil, salt and pepper.
- Set aside.
- Sprinkle bread crumbs on top of chops.
- Drizzle oil over crumbs.
- Spread potatoes on top of chops and bread crumbs.
- Add water into each corner.
- Bake at 375u0b0; cover with foil the first 1/2 hour.
- Remove foil; continue baking until potatoes brown and chops are fork-tender.
- Potatoes should also be soft.
- Total cooking time: 1 1/2 hours.
