Szechuan Chicken

  1. Split chicken breast in half; skin and debone.
  2. Cut into 1 1/2-inch cubes.
  3. Put cornstarch in paper bag or plastic baggie. Add chicken pieces and toss lightly to coat.
  4. Heat oil in electric frying pan.
  5. Add chicken and garlic.
  6. Stir-fry at 375u0b0 until chicken is lightly brown.
  7. Add soy sauce, vinegar, sugar and water to skillet.
  8. Cover and cook 3 minutes at 250u0b0 or until chicken is cooked through.
  9. Uncover skillet; add green onions and cayenne pepper.
  10. Heat 2 minutes longer and enjoy.
