Szechuan Chicken
- 2 whole chicken breasts
- 3 Tbsp. cornstarch
- 1 Tbsp. vegetable oil
- 3 cloves garlic, minced
- 5 Tbsp. soy sauce
- 1 1/2 Tbsp. white wine vinegar
- 1 tsp. sugar
- 1/4 c. water
- 1 bunch green onions, cut into 1-inch pieces
- 1/8 to 1/4 tsp. cayenne pepper
- Split chicken breast in half; skin and debone.
- Cut into 1 1/2-inch cubes.
- Put cornstarch in paper bag or plastic baggie. Add chicken pieces and toss lightly to coat.
- Heat oil in electric frying pan.
- Add chicken and garlic.
- Stir-fry at 375u0b0 until chicken is lightly brown.
- Add soy sauce, vinegar, sugar and water to skillet.
- Cover and cook 3 minutes at 250u0b0 or until chicken is cooked through.
- Uncover skillet; add green onions and cayenne pepper.
- Heat 2 minutes longer and enjoy.
