Sweet Pasta Casserole (Romanian Budinca De Macaroane)

  1. Preheat oven to 350 F. Butter an 8 x 8 inch square pan.
  2. Cook pasta according to package directions.
  3. In a large bowl, lightly whisk your eggs. Add cottage cheese, Greek yogurt, and milk. Mix until blended. Add vanilla sugar, sugar, vanilla extract, almond extract, lemon zest, and lemon juice. Mix well.
  4. Once pasta is cooked, drain and rinse with a little cold water. Add pasta to above mixture and stir to make sure you coat all the pasta.
  5. Pour into the prepared pan. Sprinkle with a tablespoon of sugar. Bake in the preheated oven for about 1 hour or until top and sides start to brown and center looks set.
  6. Remove from oven. Sprinkle with remaining sugar. Let it cool for about 20 minutes before cutting.
