Lina'S Meat Loaf(Polpettone Alla Lina)
- 2 lb. lean ground beef
- 1/2 lb. lean boiled ham, ground
- 2 eggs
- 1/2 c. Parmesan cheese, grated
- 1/4 tsp. nutmeg
- 1 tsp. salt
- 1/4 tsp. black pepper
- 1/2 c. flour
- 1 whole clove garlic
- 2 Tbsp. butter
- 4 Tbsp. oil
- 1/2 tsp. dried rosemary leaves, crumbled
- 2 bay leaves
- 1 carrot
- 1 stalk celery
- 1 small onion
- 6 sprigs fresh parsley
- 2 beef bouillon cubes
- 1/2 c. hot water
- Preheat oven to 350u0b0.
- In a large bowl, combine meat, ham, eggs, cheese, nutmeg, salt and pepper; mix well and shape into a roll 4 inches in diameter.
- Dredge in flour and place in a baking pan with garlic, butter, oil, rosemary and bay leaves.
- Over medium heat, brown roll on all sides.
- Finely chop the carrot, celery, onion and parsley; put into pan with meat roll.
- Dissolve bouillon cubes in hot water and add to pan.
- Bake for 1 hour and 30 minutes, basting occasionally with pan juices.
- Serves 6.
