Sweet Potato & White Bean Casserole
- 4 whole Sweet Potatoes (Not Yams), Peeled And Cut Into Small Cubes
- 15-1/2 ounces, weight White Beans (Canned Or Frozen), Rinsed And Drained
- 1 cup Pure Maple Syrup
- 1/2 cups Light Cream
- 1 teaspoon Cinnamon
- 1 teaspoon Pure Vanilla Extract
- 2 Tablespoons Light Brown Sugar
- Preheat oven to 375u0b0F. Prepare a 9 x 12 inch baking dish with cooking spray.
- In a large mixing bowl, add cubed sweet potatoes, beans, and maple syrup. Stir well. Add light cream, cinnamon, vanilla extract, and brown sugar; stir. Transfer ingredients into baking dish, spread out, cover with aluminum foil and bake for 30 minutes. Then remove foil and bake 10 additional minutes.
