Coconut Banana Bran Muffins
- 2-1/4 cups Flour
- 1 cup Brown Sugar
- 3/4 cups Wheat Bran
- 3/4 cups Flax Meal
- 2 teaspoons Baking Powder
- 1 teaspoon Baking Soda
- 1 teaspoon Salt
- 1/2 cups Shredded Unsweetened Coconut
- 2 whole Eggs
- 1/4 cups Buttermilk
- 1/2 cups Milk
- 1/4 cups Oil
- 2 whole Bananas, Coarsely Mashed
- Heat oven to 350F. Spray or grease muffin tins (makes about 15 standard sized muffins).
- Combine flour, sugar, bran, flax meal, baking powder, soda, salt and coconut in a large bowl. Set aside.
- In a medium bowl, lightly beat the eggs. Stir in buttermilk, milk, and oil, then add to dry ingredients and stir until just blended. Add bananas and stir lightly.
- Fill muffin cups and bake 15-20 minutes until golden brown.
