Hash Brown Faux-Quiche
- 1 bag Frozed Cubed Hash Brown Potatoes, 16 Oz
- 4 Tablespoons Butter, Melted
- 2 cups Ham, Chopped, Any Kind Works
- 2 cups Cheese, Shredded
- 4 whole Eggs
- Salt And Pepper, to taste
- Preheat oven to 375 degrees.
- Grease a 9"x13" baking pan. Place the potatoes in the bottom and pour the melted butter on them. At this point, you can bake them for about 15 minutes, until they are soft, or you can microwave them for about 5 minutes to soften them up. Once the potatoes are soft, but not fully cooked, sprinkle the ham on top, followed by the cheese. Beat the eggs and add salt and pepper to taste. Pour eggs over the casserole evenly. Bake for 20 to 25 minutes, until the eggs are set and the top is golden brown and delicious. You'll be glad you did.
- Note: you can use any ham for this-good holiday ham, country ham, cubed ham, even cut up lunch meat.
