Sweet Potato Bread
- 1 cup Unsalted Butter, Room Temperature
- 1 cup White Sugar
- 2 cups Brown Sugar
- 3 whole Large Eggs
- 15 ounces, weight Sweet Potato Puree
- 3 cups All-purpose Flour
- 1 Tablespoon Baking Powder
- 1 teaspoon Baking Soda
- 1 teaspoon Salt
- 2 teaspoons Cinnamon
- 1/2 teaspoons Ginger
- 1/2 teaspoons Nutmeg
- 1/4 teaspoons Cloves
- Preheat the oven to 350 degrees. Prepare two loaf pans with baking spray.
- In the bowl of a mixer, cream the butter and sugars together until light and fluffy. Add the eggs one at a time and mix to combine. Add the sweet potato puree and mix well. (It will look curdled, but it is not!)
- In a fine mesh strainer, add all of the dry ingredients and sift them together into a bowl. Add the dry ingredients to the sweet potato mixture and mix until just combined.
- Add the batter to the prepared loaf pans and bake at 350 degrees for about 60 minutes. The bread is ready when a toothpick inserted in the center comes out clean.
