Chicken & Orzo Noodle Soup
- 1 Tablespoon Butter
- 1/2 cups White Or Yellow Onion, Diced
- 2 stalks Celery, Chopped
- 3 whole Carrots, Chopped
- 1 clove Garlic, Minced
- 3 cups Chicken Stock
- 2 cups Water
- 1/2 teaspoons Salt, Or To Taste
- 1/4 teaspoons Black Pepepr, Or To Taste
- 1 teaspoon Dried Parsley
- 1 teaspoon Dried Basil
- 1/2 teaspoons Dried Thyme
- 1 teaspoon Poultry Seasoning
- 1 whole Bay Leaf
- 1 whole Chicken Breast
- 1/2 cups Peas, Fresh Or Frozen
- 2 cups Cooked Orzo Pasta
- Boil the orzo pasta in a pot of boiling water until al dente according to manufacturers directions. Set aside.
- In a pot cook the onion, celery and carrots in butter until onion is translucent. Add garlic and stir until garlic is fragrant. Add chicken stock, water, salt, pepper, parsley, basil, thyme, poultry seasoning and bay leaf. Heat over medium high heat until it reaches a low boil.
- Add chicken breast. Put a lid on the pot and boil gently for 15-20 minutes until chicken breast is cooked through. Remove breast from the pot and cut it into small pieces. Put chicken pieces back into the pot and add peas and cooked orzo pasta. Simmer for 5 minutes. Remove the bay leaf before serving.
