Apple Butter Raisin-Nut Loaf

  1. Combine raisins and apple juice, stirring well.
  2. Refrigerate several hours or overnight.
  3. Cream the shortening.
  4. Gradually add sugar, beating well.
  5. Add egg, mixing well.
  6. Combine 1 2/3 cups flour, soda, salt and spices.
  7. Add to creamed mixture alternately with apple butter, beginning and ending with flour mixture.
  8. Dredge nuts and raisins in remaining 1/3 cup flour; stir to coat well. Fold into batter.
  9. Spoon batter into pan.
  10. Grease a 9 x 5 x 3-inch loaf pan.
  11. Spoon batter into pan.
  12. Bake in a 350u0b0 oven for 1 hour to 1 hour and 15 minutes.
  13. Cool slightly.
  14. Remove from pan and cool.
  15. Wrap in foil and keep in refrigerator.
