Romaine Salad

  1. Chop the romaine lettuce roughly. Chop the green onions. Combine the romaine lettuce, spring mix, onions, broccoli florets, and Craisins in a large bowl.
  2. Discard the ramen seasoning pack and crumble the ramen noodles. Roughly chop the pecans. In a sauce pan, melt the butter. Lightly brown the noodles and pecans.
  3. Mix the remaining last 4 ingredients in a separate bowl. Pour over the salad.
  4. Serve immediately.
  5. Note: the original recipe was without the spring mix, but I added it for volume at a bridal shower I hosted and loved it. Also, to save time, I bought Valdosta Pecans by Sahale Snacks (mix of pecans and cranberries with black pepper). They are awesome!
