Roasted Apples & Sweet Potatoes
- 1/4 cups Water
- 1/4 cups Brown Sugar
- 1 teaspoon Pure Vanilla Extract
- 1 Tablespoon Ground Cinnamon
- 2 whole Sweet Potatoes, Peeled, Cubed Small
- 3 whole Apples (I Use Fuji), Peeled, Cored, Cubed
- 3 Tablespoons Sweet Cream Butter, Melted
- Raisins And Pecans (optional)
- Preheat oven to 425u0b0F.
- In a small saucepan over medium heat, add water, brown sugar, vanilla, cinnamon. Stir until well blended, cooking just until combined. Remove from heat and allow to cool. Set aside.
- In a large mixing bowl, add cubed sweet potatoes, apples, melted butter, and cooled syrup mixture. Stir well to coat sweet potatoes and apples. Transfer to a baking dish, cover tightly with foil, place into the oven and roast 15 minutes. Remove foil, lower oven temperature to 400u0b0F and roast an additional 5 minutes (add optional raisins and pecans, if desired).
- Serve with your favorite main course. We love these with ham, chicken, turkey or pork.
