Sweet Potato Hash With Onions And Feta
- Butter For Pan
- 2 whole Large Sweet Potatoes, Peeled And Chopped Into Cubes
- 3 whole Yellow Onions, Sliced
- 2 Tablespoons Olive Oil
- Kosher Salt And Freshly Ground Black Pepper, To Taste
- 1 Tablespoon Oregano
- 1/2 cups Crumbled Feta Cheese (if You Like, You Can Add More Feta)
- Preheat oven to 450u0b0F. Butter a large baking pan or dish and set aside.
- Add the chopped sweet potatoes, onions, and olive oil in a bowl and mix. Season with salt, pepper, and oregano. Mix together and place the sweet potatoes on prepared baking dish in a single layer.
- Roast for 20 to 25 minutes, stirring once halfway through cooking, and cook until potatoes are fork tender.
- Remove from oven and sprinkle with feta cheese.
- Serve.
