Magical Soup For Children
- 26-1/2 ounces, weight Carrots
- 26-1/2 ounces, weight Potatoes
- 2 Onions
- 1 Tablespoon Butter
- 3 cups Vegetable Broth
- 4 Spicy Pork Sausages/frankfurters
- Salt
- Pepper
- Parsley
- Peel and chop the carrots and the potatoes. Finely chop the onions.
- Melt the butter in a soup pan and cook the onions until translucent. Add the carrots and continue cooking for about 5 minutes. Add the potatoes and keep cooking for about 3 minutes.
- Add the broth, cover the pan, bring to a boil and cook for about 15 minutes. In the meantime cut the sausages into slices. Lower the heat and add the sausage slices to the soup. Leave for about 5 minutes until the sausages are heated through and the vegetables are soft.
- Adjust the taste with salt and pepper and sprinkle the chopped parsley on top.
