Chili Pie
- 1 lb. ground beef
- 1/2 c. chopped onion
- 1 (7 1/2 oz.) can whole tomatoes, drained and cut up
- 1 (1 1/4 oz.) envelope chili seasoning mix
- 1 (2.25 oz.) can sliced ripe olives, drained
- 1 c. shredded Cheddar cheese
- 1 1/4 c. milk
- 3/4 c. Bisquick baking mix
- 3 eggs
- Heat oven to 400u0b0.
- Grease a 10 x 1 1/2-inch pie plate.
- Cook and stir ground beef in 10-inch skillet until brown.
- Drain. Stir in onion, tomatoes and seasoning mix (dry).
- Spread in plate. Sprinkle with olives and cheese. Beat remaining ingredients until smooth, 15 seconds in blender on high or 1 minute with hand beater.
- Pour into plate.
- Bake until knife inserted between center and edge comes out clean, 30 to 35 minutes. Cool 5 minutes. Serve with sour cream, shredded lettuce and chopped tomatoes, if desired.
- Makes 6 to 8 servings.
