Pookie’S Zucchini Relish
- 2 whole Green Bell Pepper, Grated
- 2 whole Red Bell Pepper, Grated
- 10 cups Grated Zucchini
- 4 cups Grated Onion
- 4 Tablespoons Salt
- 4 cups Sugar
- 2-1/2 cups White Vinegar
- 1 Tablespoon Dried Mustard
- 1 Tablespoon Turmeric
- 1 Tablespoon Celery Seed
- Sprinkle grated peppers, onion and zucchini with salt and let set overnight in the fridge.
- Drain, rinse and combine remaining ingredients in a heavy-bottomed pan. Bring to a boil for 30 minutes. Pour into clean, sterilized pint jars. Place lids in hot water for 5-6 minutes, then place the lids on the jars. You do not need to do a hot water bath. It will seal as it cools. Be sure bottles are clean after filling so you get a good seal.
