Pookie’S Zucchini Relish

  1. Sprinkle grated peppers, onion and zucchini with salt and let set overnight in the fridge.
  2. Drain, rinse and combine remaining ingredients in a heavy-bottomed pan. Bring to a boil for 30 minutes. Pour into clean, sterilized pint jars. Place lids in hot water for 5-6 minutes, then place the lids on the jars. You do not need to do a hot water bath. It will seal as it cools. Be sure bottles are clean after filling so you get a good seal.
  3. Makes 4 pints.
