Puttanesca
- 1/4 c. Olive Oil
- 1/2 lb. Bacon, cut into 2 inch strips
- 4 med. Onions, chopped
- 1 Tbsp. Dried Oregano
- 1 Tbsp. Sugar
- 1 Tbsp. Seasoned or Black Pepper
- 6 med. Cloves Garlic, minced or pressed
- 3 Hot Chili Peppers, chopped
- 1 can (28 oz.) Whole Tomatoes
- 1 Tbsp. Dried Basil
- 1 tsp. Salt
- 1/2 c. Parmesan Cheese
- In a large skillet, heat the olive oil over medium heat.
- Add bacon, garlic, onions, and chilis, saute only until bacon begins to brown, 5 to 7 minutes.
- Add the tomatoes, breaking them up with your hands.
- Stir in spices.
- Boil until thick, 15 to 20 minutes. Stir in parmesan cheese just before serving.
- Serve over spaghetti, linguine, fettuccini, fusilli, or pasta shells.
- Serves 6.
