Sweet Sausage Chili

  1. Chop the onion, roughly. Remove seeds and membranes from jalapenos to reduce heat (or leave some in if desired) and dice.
  2. Heat the oil over medium-high heat in a heavy large pot and saute the onions and peppers until just starting to brown at the edges.
  3. Remove casings from sausage and add to the pan, breaking the meat apart with a fork. Stir frequently, cooking until browned.
  4. Dice tomatoes, and chop the oregano leaves roughly while the meat cooks.
  5. When meat is browned, add the beans, tomatoes, oregano, chili powder, garlic, salt and pepper (to taste) to the pan, along with water to cover by about 1 inch. Bring to a boil, then turn heat to low and simmer uncovered for 30 minutes.
  6. Enjoy!
