Sweet Sausage Chili
- 1 whole Onion
- 4 whole Jalapeno Peppers
- 2 Tablespoons Olive Oil
- 1 pound Sweet Italian Sausage
- 8 whole Plum Tomatoes
- 6 sprigs Fresh Greek Oregano
- 3 cups Cooked Cannelini Beans
- 2 Tablespoons Chili Powder
- 1 teaspoon Granulated Garlic
- Salt And Pepper, to taste
- Chop the onion, roughly. Remove seeds and membranes from jalapenos to reduce heat (or leave some in if desired) and dice.
- Heat the oil over medium-high heat in a heavy large pot and saute the onions and peppers until just starting to brown at the edges.
- Remove casings from sausage and add to the pan, breaking the meat apart with a fork. Stir frequently, cooking until browned.
- Dice tomatoes, and chop the oregano leaves roughly while the meat cooks.
- When meat is browned, add the beans, tomatoes, oregano, chili powder, garlic, salt and pepper (to taste) to the pan, along with water to cover by about 1 inch. Bring to a boil, then turn heat to low and simmer uncovered for 30 minutes.
