Ruby’S Coffee Cake
- FOR THE CAKE:
- 2/3 cups Shortening
- 1/2 cups Brown Sugar
- 1 cup White Sugar
- 2 whole Eggs
- 1/2 teaspoons Salt
- 1 teaspoon Baking Soda
- 1 teaspoon Baking Powder
- 2 cups Flour
- 1 teaspoon Cinnamon
- 1/2 teaspoons Nutmeg
- 1 cup Buttermilk
- FOR THE TOPPING:
- Butter, For Dotting On Top Of Cake
- 1/2 cups Brown Sugar
- 1 teaspoon Cinnamon
- For the cake, cream together the shortening, brown sugar and white sugar. Add eggs, salt, baking soda, baking powder, flour, 1 teaspoon cinnamon, nutmeg and buttermilk.
- Pour batter into a 9x13 pan. Dot with butter, and top with a mixture of 1/2 cup brown sugar and 1 teaspoon cinnamon.
- Bake at 350u0b0F until a toothpick inserted into the cake comes out clean.
