Sweet Tea Lemon Bars
- FOR THE CRUST:
- 2/3 cups Butter, Softened
- 1/4 cups Sugar
- 1-1/4 cup Flour
- FOR THE FILLING:
- 2 whole Eggs
- 3/4 cups Canned Sweetened Condensed Milk
- 2 teaspoons Flour
- 1/2 teaspoons Baking Powder
- 1/8 teaspoons Salt
- 1/3 cups Lemon Flavored Sweet Tea
- 1 whole Lemon, Juiced And Zested
- 1 Tablespoon Fresh Mint, Chopped
- FOR THE GLAZE:
- 1 cup Powdered Sugar
- 2 Tablespoons Lemon Juice
- 1 Tablespoon Sweet Iced Tea
- Preheat oven to 350 F. In a medium bowl, cream together butter and sugar. Mix in flour. Dough will be crumbly as you press it into an even layer across the bottom of an 8 x 8 square-baking dish. Bake for 20 minutes or until golden. Remove from oven and let it cool while you prepare the filling.
- In a small bowl, whisk together the eggs and milk. Stir in the flour, baking powder and salt. Add tea, lemon juice, lemon zest and finally the fresh mint. Pour this over the baked crust. Return bars to the oven and bake for 18-20 minutes or until set. Remove dish from the oven and let it cool completely.
- When bars have cooled, combine powdered sugar, lemon juice and tea in a small bowl and mix until sugar is dissolved. Pour glaze over cooled bars, spreading to smooth it over the top.
- Keep leftovers refrigerated.
