Gluten Free Onion Rings
- 2 whole Large Yellow Onions
- 1 quart Buttermilk, Milk, Or Plain Unsweetened Almond Milk (for Soaking)
- 2 cups Gluten Free Pancake Mix (we Used Pamela's)
- 1/2 cups Corn Meal
- 2 teaspoons Salt (optional)
- 2 whole Eggs
- 1-1/2 cup Water Or Milk (we Used Plain Unsweetened Almond Milk)
- 1/2 gallons Oil, For Frying
- Put 1/2 gallon of oil in a large, heavy bottomed pan and heat oil to 350 degrees F.
- Slice onions using a mandolin - cutting them 1/4-inch thick - or you can hand cut.
- Put sliced onions in a bowl with 1 quart of milk to soak.
- Combine pancake mix, corn meal, salt, eggs, and the 1 1/2 cups of water or milk. Whisk to combine. It should be a little thicker than pancake batter.
- Dip onion rings in batter and place on a rack placed on top of a cookie sheet.
- Fry rings in the hot oil - do this in batches for approximately 2-4 minutes or until golden brown. When they are done, remove them from the oil to a paper towel lined plate and repeat to fry the remaining onions. Rings will darken in color as they sit.
