Funky Spicy Carrot Salad
- 1 kilogram Carrots, Peeled
- 6 cloves Garlic, Grated
- 1 teaspoon Salt
- 1 teaspoon White Pepper Powder
- 2 Tablespoons Sweet Paprika Powder
- 1 pinch Hot Paprika Powder (optional)
- 4 pieces Dried Chilli Peppers, Cut Into 2 To 3 Pieces (optional)
- 2 Tablespoons Olive Oil
- 1 whole Lemon, Juiced
- Boil water in a pot. Once boiling, place carrots in the pot and boil until soft, about 30 minutes. When carrots are ready, take them out of the pot, drain, and let cool until you can handle them.
- Cut carrots into cubes and put in a bowl with grated garlic, salt, pepper, paprika, chili peppers. Mix well. Add olive oil and lemon juice and mix again.
- Although it is very tasty as is, I recommend letting the salad marinate for a few hours and up to 1 day in the refrigerator before eating it, to let all the flavors meld and intensify.
- Keep refrigerated in a covered container. It keeps for about 8-10 days.
