Veal Parmesan
- 1/4 c. Italian bread crumbs
- 1/4 c. grated Parmesan cheese
- 1/2 tsp. salt
- 1/2 tsp. paprika
- dash of fresh pepper
- 5 (3/4-inch) veal loin chops, boned and tenderized until thin
- 1 beaten egg
- 2 Tbsp. olive oil
- 5 slices Mozzarella cheese
- 1 (8 oz.) can tomato sauce
- 1 to 3 cloves garlic, crushed
- 1 tsp. oregano
- 1/4 c. Sauterne
- dash of Sweet 'N Low
- Mix crumbs, Parmesan cheese, salt, paprika and pepper.
- Dip chops in egg, then in crumbs.
- Brown in oil.
- Place slice of Mozzarella cheese in each.
- Mix tomato sauce, garlic, wine, oregano and Sweet 'N Low.
- Pour over chops.
- Simmer 50 minutes.
- Serve with linguini.
- Makes 4 servings.
