Grilled Honey-Bourbon Salmon

  1. Thaw salmon if frozen.
  2. Rinse fish, pat dry, place in plastic bag set in a shallow baking dish.
  3. In a small bowl, stir together bourbon, brown sugar, honey, soy sauce, ginger and pepper.
  4. Pour over fish in bag.
  5. Close bag.
  6. Marinate fish in refrigerator one hour, turning occasionally.
  7. Drain fish, reserving marinade.
  8. Coat rack with oil or spray.
  9. Place fish on rack of uncovered grill directly over medium heat.
  10. Grill 8 to 12 minutes or until fish begins to flake easily with fork, turning once.
  11. Brush once with reserved marinade half-way through grilling time.
  12. Discard remaining marinade.
  13. Serves:
