Good Old Fashioned Macaroni Salad
- 1 pound Macaroni (uncooked)
- 1/4 whole Medium Red Onion, Diced Finely
- 3 whole Scallions, Chopped
- 1/4 cups Carrot, Shredded
- 1/2 whole Red Or Green Bell Pepper, Diced
- 2 whole Hard Boiled Eggs, Chopped
- 1/2 cups Frozen Green Peas, Thawed
- 1/2 cups Celery, Diced
- 1 cup Mayonnaise, Regular Or Light
- 2 Tablespoons Half-and-Half Or Milk
- 1/2 Tablespoons Red Wine Or Other Vinegar
- 1 teaspoon Sugar
- 2 teaspoons Dried Dill, Use Fresh If You Have It!
- 1 Tablespoon Dijon Mustard
- 1 teaspoon Regular Mustard, Or More To Taste
- 2 Tablespoons Dry Ranch Dressing Powder
- Salt And Pepper, to taste
- Cook macaroni noodles in boiling salted water for about 7-8 minutes; drain and cool slightly.
- In a large bowl, place cooked macaroni, onion, scallions, carrot, pepper, eggs, peas, and celery. Mix well.
- Dressing: in smaller bowl, mix mayo, half and half, vinegar, sugar, dill, mustards, and ranch mix.
- Pour dressing over macaroni mixture and mix well. Add black pepper to taste - you may need a little salt too, but the ranch dressing is salty so be sure to taste first.
- Garnish with a sprinkling of dill and a sprig of parsley if desired. Chill before serving.
