Irresistible Zucchini Casserole
- 1 whole Onion, Sliced (approximately 3/4 Cup)
- 1 whole Zucchini, Sliced (approximately 2 Cups)
- 2 Tablespoons Cooking Oil
- 1 Tablespoon Butter
- 1 clove Garlic, Minced
- 4 Tablespoons Cream Cheese
- 1/2 cups Sour Cream
- Salt And Pepper
- 2 Tablespoons Parmesan Cheese
- Slice the vegetables to about a 1/4 inch thickness.
- Heat oil and butter in a skillet over medium heat. Saute onions until softened. Add garlic and zucchini and allow to cook until the zucchini is just beginning to soften (about 5 minutes).
- Put dollops of cream cheese into the pan along with the sour cream. Stir until the sauce is completely melted. Season to taste with salt and pepper.
- Transfer to a baking dish and sprinkle with Parmesan cheese. Bake at 350u0b0F for 15 minutes or until bubbly and Parmesan is browned lightly.
