Taco Soup
- 1-1/2 pound Ground Beef
- 1 whole Medium-sized Sweet Onion, Chopped
- 5 sticks Chopped Celery
- 1 can Tomato Sauce (15oz)
- 1 can Diced Tomato (28 Oz)
- 2 cans (15 Oz. Size) Kidney Beans, Drained And Rinsed
- 2 cans Cans Of Yellow Corn, Included Juice (15 Oz Each)
- 2 packages Taco Seasoning (1 Oz Each)
- 1 teaspoon Garlic Powder
- 1 teaspoon Chili Powder (optional)
- Optional Toppings: Sour Cream, Cheese, Etc
- Cook and brown the meat in a pot, adding the onion at the very end. Once the onion is cooked and translucent, drain all the fat.
- Next, add all the rest of the ingredients (except toppings) into the pot.
- Let this mixture come to a boil and simmer on medium/low for 1 hour, or longer. I couldn't wait longer than an hour and it was perfect, but I've been told the longer this soup cooks on the stove, the better it gets!
- Don't forget to serve it with a dollop of sour cream and cheese on top, with corn bread on the side! Yummy!!!
