Apple Fritter Bread

  1. Place yeast, honey and warm water in the bowl of a stand mixer. Whisk to combine. Allow to sit for 15-20 minutes, until mixture has puffed up.
  2. Fit mixer with dough hook. Stir in salt, then mix in flour, 1/2 cup at a time, with the mixer running on low. Mix in flax seed, if using. Mix on low for 4-5 minutes, until a ball has formed. Dough should be slightly sticky. Mix in diced apple and walnuts until combined.
  3. Place a few spoonfuls of flour on a large piece of parchment paper. Transfer dough to the paper and form a ball. Place a damp cloth over the dough and let rise for about 1 hour or until dough has doubled in size. Transfer dough with the parchment paper into the crock pot. Set on low.
  4. Whisk together melted butter, cinnamon and brown sugar in a liquid measuring cup. Pour mixture over dough and swirl it into the dough with a butter knife. Place the lid on the crock pot and cook on low for 1 to 2 hours, until internal temperature of bread reaches 190-200u0b0F.
