Apple Fritter Bread
- 1 envelope (1/4 Oz. Size) Active Dry Yeast
- 1 Tablespoon Honey
- 1-1/4 cup Warm Water
- 1-1/4 teaspoon Coarse Salt
- 3 cups Whole Wheat Pastry Flour, Plus A Few Spoonfuls
- 2 Tablespoons Ground Flax Seed (optional)
- 3 whole Medium Sweet Apples, Diced
- 1/2 cups Walnuts, Chopped
- 2 Tablespoons Butter, Melted
- 1-1/2 teaspoon Cinnamon
- 2 Tablespoons Brown Sugar
- Place yeast, honey and warm water in the bowl of a stand mixer. Whisk to combine. Allow to sit for 15-20 minutes, until mixture has puffed up.
- Fit mixer with dough hook. Stir in salt, then mix in flour, 1/2 cup at a time, with the mixer running on low. Mix in flax seed, if using. Mix on low for 4-5 minutes, until a ball has formed. Dough should be slightly sticky. Mix in diced apple and walnuts until combined.
- Place a few spoonfuls of flour on a large piece of parchment paper. Transfer dough to the paper and form a ball. Place a damp cloth over the dough and let rise for about 1 hour or until dough has doubled in size. Transfer dough with the parchment paper into the crock pot. Set on low.
- Whisk together melted butter, cinnamon and brown sugar in a liquid measuring cup. Pour mixture over dough and swirl it into the dough with a butter knife. Place the lid on the crock pot and cook on low for 1 to 2 hours, until internal temperature of bread reaches 190-200u0b0F.
