Low-Fat Fettuccine
- 8 oz. fettuccine or linguine
- 1 Tbsp. olive oil
- 3/4 c. evaporated skim milk
- 1/3 c. grated Parmesan cheese
- 1/4 c. sliced green onion
- 2 Tbsp. fresh basil or 1/2 tsp. dried basil
- 1/4 tsp. shredded lemon peel
- 1/4 tsp. garlic powder
- 1/8 tsp. pepper
- freshly grated Parmesan cheese
- fresh basil sprig
- quartered lemon slices
- Cook pasta; drain
- andteturnto pan.
- Add olive oil, toss to coat,
- add
- milk,
- 1/3 cup cheese, onion, basil, lemon peel, garlic
- powder
- and
- pepper.
- Cook over medium-high heat until bubbly,
- stirring constantly.
- Season.
- Top with cheese and basil. Serve with lemon.takes 6 side dishes.
