Honey-Ginger Glazed Carrots
- 2 Tablespoons Butter
- Salt And Pepper, to taste
- 1 pound Medium-sized Carrots (I Used Heirlooms), Peeled And Sliced Into 1 1/2 To 2 Inch Lengths
- 2 Tablespoons Honey
- 1 Tablespoon Freshly Grated Ginger
- 1/4 cups Water
- 1/2 teaspoons Lemon Zest
- 1 Tablespoon Lemon Juice
- Heat a large nonstick pan over medium to medium-high heat. Melt butter in the pan, add in carrots, and season with salt and pepper. Sear carrots for 3-4 minutes on the first side or until browned. Flip and sear another 3-4 minutes on the opposite side.
- Whisk together honey, ginger and water in a small bowl. Pour honey mixture into the pan. Bring to a boil, reduce to a simmer and partially cover. Cook until mixture thickens into a glaze and carrots are tender, 8-12 minutes. Add more water as it evaporates, 1-2 tablespoons at a time, as needed.
- Stir in lemon juice and zest during the last 2 minutes of cooking. Taste for seasoning. Enjoy.
