Caramel Apple Cheesecake
- 1 whole Graham Cracker Crust
- 1 can Apple Fruit Pie Filling
- 2 packages (8 Oz. Package) Cream Cheese, Softened
- 1/2 cups Sugar
- 1/4 teaspoons Vanilla
- 2 whole Eggs
- 1/4 cups Caramel Topping (The Kind Used For Ice Cream)
- 2 Tablespoons Chopped Pecans
- Preheat oven to 350 degrees. Set aside 3/4 cup of the pie filling. Spoon remaining filling into the crust.
- Beat together cream cheese, sugar and vanilla until smooth. Add eggs and beat well.
- Pour mixture over apple filling in the crust and bake for 35 minutes or until center is set.
- After the cheesecake has completely cooled, mix reserved apple filling and caramel topping in a small saucepan. Heat for one minute. Spoon caramel sauce onto the cheesecake and spread evenly. Sprinkle with chopped pecans.
- Refrigerate until ready to serve.
