Cabbage & Noodles
- 1 head Green Cabbage, Very Coarsely Chopped
- 1 whole Large Yellow Onion, Chopped
- 4 Tablespoons Vegetable (not Olive) Oil
- 1 bag Wide Egg Noodles (I Use No Yolks)
- Salt And Pepper, To Taste
- 1 tub Cottage Cheese
- While you boil water for the noodles, chop the cabbage.
- Saute the onions in vegetable oil in the largest, deepest frying pan you have. Add the cabbage, and enough additional oil to sparingly coat. Stir, stir, stir. Sprinkle with salt, and keep stirring, seasoning and tasting until you get it right. You can cover the cabbage off and on, so it steams and cooks down faster.
- After the noodles are done, drain and toss with the cabbage and onions. You may have to add some more salt, and keep cooking until the cabbage gets browned here and there.
- Serve with cottage cheese and black pepper.
