Tater Tot & Sausage Breakfast Casserole

  1. Preheat oven to 350 F. Spray a 9x9 inch baking sheet with oil and cover bottom of dish with frozen tater tots and set aside.
  2. Brown sausage in a medium sized skillet over medium heat. When the sausage is done, drain off the grease and dump it on top of the tater tots.
  3. In a bowl combine the eggs, cream of mushroom soup, milk, parsley, minced onion, red pepper flakes and garlic salt. Beat until mixed through and pour over the sausage and tots.
  4. Bake for 45-55 minutes or until eggs are cooked through. Remove dish from oven. Top with cheese, then put it back into the oven and bake for an additional 5 to 10 minutes until cheese is melted. Enjoy!
