Tater Tot Quiche
- 43 whole Tater Tots
- 1 whole Shallot, Diced
- 2 cups Fresh Spinach, Chopped
- 6 whole Sausage Links
- 7 whole Eggs
- 1/4 teaspoons Salt
- 1/2 teaspoons Pepper
- Preheat oven to 400 F.
- Place tots in the bottom of a pie pan (10 inches in diameter) in an even layer. Bake for 15 minutes.
- While tots are baking, chop shallot, spinach and sausage. Saute shallot and spinach for 3-5 minutes over medium low heat. Turn off heat and add sausage. Set aside.
- Whisk eggs in a large bowl. Add salt and pepper.
- Remove tots from the oven. Mash tots using a fork to form a crust.
- Pour veggies and sausage on top of the crust, arrange in an even layer. Pour eggs over the top.
- Bake at 375 F for 20-25 minutes, until center is just set and no longer jiggly. Top with avocado and hot sauce if desired.
