Tater Tot Quiche

  1. Preheat oven to 400 F.
  2. Place tots in the bottom of a pie pan (10 inches in diameter) in an even layer. Bake for 15 minutes.
  3. While tots are baking, chop shallot, spinach and sausage. Saute shallot and spinach for 3-5 minutes over medium low heat. Turn off heat and add sausage. Set aside.
  4. Whisk eggs in a large bowl. Add salt and pepper.
  5. Remove tots from the oven. Mash tots using a fork to form a crust.
  6. Pour veggies and sausage on top of the crust, arrange in an even layer. Pour eggs over the top.
  7. Bake at 375 F for 20-25 minutes, until center is just set and no longer jiggly. Top with avocado and hot sauce if desired.
  8. Enjoy!
