Tater Tot Turkey Sausage Breakfast Casserole
- 2 pounds Tater Tots, Thawed
- 1 pound Ground Turkey Sausage
- 1 Yellow Onion, Diced
- 4 Large Eggs
- 1-1/2 cup Skim Milk
- 1 Tablespoon Hot Sauce
- Salt And Pepper
- 2 cups 2% Cheddar Cheese, Divided
- Preheat oven to 375u0b0F. Lay thawed tater tots out on a baking sheet and bake for 15 minutes to make sure the moisture is cooked out. Meanwhile, heat a large skillet over medium-high heat and cook the sausage and onion. Drain off fat and set aside. In a medium bowl, beat the eggs and add the milk, hot sauce, salt and pepper, and stir to combine.
- Pour sausage and onion mixture in a 9x13 pan. Layer 1 1/2 cups of the cheese over the sausage mixture. Pour the egg and milk mixture over that. Line the entire pan with the tater tots. Bake, uncovered, for 35 minutes. Pull out of the oven and top with remaining 1/2 cup of cheese, and bake for a remaining 5 minutes. Remove from oven and cool slightly before serving.
