Mojo Verde (Canarian Green Sauce)
- 1 bunch (large Bundle) Cilantro (or Parsley) Leaves, Stalks Removed
- 3 cloves Garlic
- 1/3 cups Sunflower Seeds (optional)
- 1/2 Lime, Juiced
- 1/2 teaspoons Cumin
- 1 teaspoon Sea Salt
- 1/2 teaspoons Black Pepper
- 3/4 cups Extra Virgin Olive Oil
- Fresh Bread, Potatoes, Roasted Vegetables Or Fish To Serve
- Blend cilantro (or parsley), garlic, sunflower seeds (optional), lime juice, cumin, sea salt and black pepper with a food processor or blender. Gradually add oil until you like the consistency. Serve with fresh bread, potatoes, roasted vegetables or fish. Enjoy!
- If you want to preserve this, boil jars in water for 15 minutes, cool them, then pour the green sauce in with 1 tablespoon of olive oil on top. That way, you can store it in the fridge for a few weeks. If you want to store it longer, simply freeze it.
