Texas Chocolate Sheet Cake
- FOR THE CAKE:
- 1 cup Nonfat Vanilla Greek Yogurt
- 1 whole Banana, Mashed
- 1/4 cups Butter
- 1 cup Water
- 3 Tablespoons Cocoa Powder
- 2 cups White Whole Wheat Flour
- 1-1/2 cup Sugar
- 1 teaspoon Cinnamon
- 1/2 teaspoons Sea Salt
- 1 teaspoon Baking Soda
- 1/2 cups Buttermilk
- 2 whole Eggs, Beaten
- 1 teaspoon Vanilla
- FOR THE FROSTING:
- 1 cup Nonfat Greek Yogurt
- 3 Tablespoons Cocoa Powder
- 6 Tablespoons Milk
- 1 cup Powdered Sugar
- 1 teaspoon Vanilla
- 1 cup Walnuts
- Preheat oven to 350 F. Grease and flour a 15 x 12 pan (jelly roll pan).
- In a large saucepan combine yogurt, banana, butter, water and cocoa powder. On medium heat mix ingredients until well combined and coming to a soft boil. Then remove from heat.
- In a separate bowl combine flour, sugar, cinnamon, salt and baking soda. Mix together. Add it into the cocoa mixture. Add buttermilk, eggs and vanilla into the saucepan mixture. Stir until well combined.
- Pour mixture into prepared pan. Bake 25 minutes for 15 x 12 pan.
- Meanwhile make frosting. Combine 1 cup yogurt, 3 tablespoons cocoa powder, 6 tablespoons milk, powdered sugar and vanilla using a mixer.
- Pour over hot cake and sprinkle with nuts. Let cool at least 1 hour.
