Broccoli Cheese Casserole
- 20 ounces, weight Cooked Broccoli (Two 10 Oz. Packages, Thawed)
- 1-1/2 cup Shredded Cheddar Cheese
- 1 cup Mayonnaise
- 2 whole Eggs, Cracked And Beaten
- 1 can Condensed Cream Soup (We Like Cream Of Mushroom In Our House, But Chicken Also Works)
- 1 stick Butter, Softened
- 1 cup Ritz Crackers, Crushed
- Yes, that says a stick of butter. And mayo. And cream of mushroom soup. I never claimed to be healthy.
- Lightly "grease" (i.e. Pam) a 2-quart casserole dish. In a large bowl, combine cheese, broccoli, mayo, eggs, cream of whatever soup and butter. Add to the casserole dish. Top with crushed crackers.
- Bake for 35 to 40 minutes at 350F.
- This can be baked a day or two in advance and refrigerated, then reheated in the oven the day of the holiday.
