Broccoli Cheese Casserole

  1. Yes, that says a stick of butter. And mayo. And cream of mushroom soup. I never claimed to be healthy.
  2. Lightly "grease" (i.e. Pam) a 2-quart casserole dish. In a large bowl, combine cheese, broccoli, mayo, eggs, cream of whatever soup and butter. Add to the casserole dish. Top with crushed crackers.
  3. Bake for 35 to 40 minutes at 350F.
  4. This can be baked a day or two in advance and refrigerated, then reheated in the oven the day of the holiday.
