Stir Fried Pork
- 1 1/2 lb. pork loin, cut into 1 inch cubes
- 1 tsp. salt
- 1/4 tsp. fresh ground pepper
- 3 Tbsp. cooking oil
- 1 1/2 tsp. corn starch
- 1 Tbsp. water
- 1 onion cut into thin slices
- 3 carrots, cut into 2 inch long slices, about 1/2 inch wide
- 1/2 lb. bok choy, cut into 1 inch pieces (about 3 cups)
- 2 cloves garlic, minced
- 1/2 tsp. celery seeds
- 1/2 c. canned low sodium chicken broth
- 1/4 c. fresh orange juice
- In medium bowl, toss pork loin with 1/4 tsp. salt and pepper. In a large fry pan or wok, heat 1 Tbsp. oil.
- Add half the pork and cook, stirring until browned, 2-3 minutes.
- Remove, Repeat with another Tbsp. oil and remaining pork.
- Remove.
