Okara(Bean Curd Residue Dish)
- 5 1/2 c. okara
- 1/2 c. string beans, chopped
- 1 c. carrots, cut to matchstick size
- 1/3 c. shredded dried shrimp
- 1 handful dried mushrooms, soaked in 1 c. water to soften
- 3 Tbsp. shoyu
- 2 tsp. salt
- 7 Tbsp. sugar
- 1 tsp. gourmet powder
- 1 Tbsp. vegetable oil
- 2 c. green onions, cut in 1/2 inch lengths
- Cut
- mushroomstn
- small
- strips and boil (in water in which mushrooms have been soaked) together with shrimp for 10 minutes. Add
- carrots
- and
- beans
- until tender.
- Season with shoyu,
- salt, sugar
- and
- gourmet powder and cook few minutes longer.
- Heat
- a large skillet, adding oil.tdd the vegetable mixture
- andttir inthe okara until well blended, stirring constantly to prevent burning on the bottom.
- Add green onions a few minutes before removing from stove.
- Okara should be dry and flaky.
- It is also good and healthy!
